First, let's talk about nutrition for acute pancreatitis. Immediately after the exacerbation and for the next two days, you should not eat anything. All we were allowed was five or six glasses of mineral water. Organ regeneration occurs because gastric and pancreatic juices are not secreted.

On the third day, you can eat unsalted liquid foods that are high in carbohydrates. Breads, soups with vegetables and cereals, with thin broths are allowed. Then you can enter steam omelette, turkey fillet, chicken, lean fish.

On the fifth day, the calorie content increases to 700-800 kcal, of which 200 g are carbohydrates, 15 g are proteins. Fat is introduced between the sixth and ninth days.

The menu during this period should be as follows:

  • We have breakfast with rice porridge without milk, tea with sugar, orange (apple);
  • Snack on carrot (potato) puree, boiled low-fat fish or chicken (50g), rosehip broth;
  • 150 g of broth (vegetables), 30 g of boiled fish (veal), mashed apples, mashed potatoes for lunch;
  • Second snack. 50 g cottage cheese (0-2%) with sugar, sweet tea;
  • Instead of dinner - a spoonful of honey and boiled water (250 ml).

Recovery after exacerbation

Nutrition for people with acute pancreatitis after an acute exacerbation is more diverse. If you try, you can really find interesting and delicious recipes from what's allowed. We eat 5-6 times a day. It's best to use steam when cooking, puree everything in a blender, cook.

You can eat:

  • Meat with minimal fat (minced and cooked). Cook meatballs, steamed cutlets, meat soups. Lean beef, rabbit, turkey fillet, chicken, veal are allowed;
  • Fish (you can use pollock, cod, pike, pike perch, halibut, and other lean varieties). Allow to boil or steam, steam chopped;
  • Oatmeal porridge, buckwheat, semolina, rice. Barley with corn is rare. We cook in water (or milk and water in equal proportions);
  • Pasta. No sauce added, only olive oil, butter. Do not stir-fry with garlic, oil, onion;
  • Dairy products. Whole milk is not recommended. Allow fermenting baked milk, kefir, small cheeses up to 9%, light cheeses;
  • Egg. Just like omelette or soft boiled. Rarely used;
  • Vegetable. Baked, boiled, mashed, vegetarian soups, casseroles. Pay attention to carrots, potatoes, melons, beets, green beans, cauliflower. You can't eat most cruciferous plants, mushrooms, horseradish, raw onions, spinach, garlic, beans (legumes in general), sweet peppers, sorrel;
  • We also bake fruit, cook compotes, jellies, make mashed potatoes. Apricots, watermelons, watermelons are ideal;
  • Dry white bread with pancreatitis, tea with pretzels salty and not rich;
  • Jelly, home-made mousse. Less commonly, marshmallows;
  • Mineral water, soft drink, weak tea, rosehip broth, jelly.

Chronic form

Diet for people with chronic pancreatitis is different from the menu for people with acute inflammation. The chronic "version" develops along with an acute inflammatory process of the gland, with cirrhosis, hepatitis, gallstone disease, intestinal and gastric ulcers, atherosclerosis. The menu should take into account the background of the developed acute pancreatitis.

The main treatment for you is not medicine, but a diet for chronic pancreatitis, an approximate menu based on several principles:

  1. We eat six times a day and little by little, products with a laxative effect are required.
  2. Track your daily protein intake. It needs 130 g per day, vegetable protein needs 30% of this. Eat beef, rabbit, turkey, pork with minimal fat, chicken and lean fish. In constant pain, cooked meat is minced or steamed. You should not give up low-fat fish and meat dishes: they will prevent fatty degeneration of the liver, which is a feature of chronic inflammatory processes in the pancreas;
  3. Fat conversion is countered by fresh homemade cheeses (not sour and with a minimal percentage of fat). Other dairy products are also needed. Whole milk is added to starters, cereals, jellies, or half a glass per day (if well tolerated). The fat content in milk is not more than 2. 5%. If you feel good, say cheese (a little) with a minimum of fat and light varieties. Don't forget the kefir and fermented milkshakes (homemade is the best option). There's no need to eat store-bought yogurt with flavor and starch: there's no benefit here;
  4. Egg. Entirely not recommended. Eggs are accepted as an accompaniment to other dishes, in the form of steamed omelets (protein), whipped proteins in other dishes;
  5. Vegetable proteins. We are looking for them in rice, pasta, yesterday's bread, oatmeal, semolina, breadcrumbs, buckwheat. Legumes are prohibited;
  6. Fat. There should be 70 of them in the patient's diet. 80% must be of animal origin. They will be consumed correctly with other foods and dishes. Put butter in porridge or ready-made noodles before serving. Vegetable oils are allowed if you tolerate them well. Other fats (food, beef, margarine, pork) are prohibited;
  7. Carbohydrates. They need up to 350g per day. This is honey, sugar, syrup and jam. You need to eat semolina, oatmeal, buckwheat, pearl barley, rice, pasta. From vegetables, carrots, radishes, potatoes, melons (zucchini, pumpkin, squash) are fine. It is better to cook them in steam or water, steamed pudding is also suitable, it is ideal to eat vegetables in the form of mashed potatoes. Don't eat them raw. Bread is allowed to be white, black, gray;
  8. Fruit. Most of all, non-acidic apples are needed. Bake, wipe, boil compote. For the latter, dried fruit is suitable;
  9. Dipping sauce. Of all the categories with pancreatitis, only one type of pastry made from flour and milk is allowed. We do not pass flour, add a minimum amount of salt;
  10. First meal. We never turn them down. You are allowed to eat cereals, vegetables, lean poultry, meat, fruit, milk soups;
  11. Drinks. In addition to the above preparations, should drink fruit juices, milk tea, mineral water;
  12. Supplements, specialty products. Add protein powder and vitamins to the diet;

Do not overeat, and the volume of food (plus all the fluids you drink) should be no more than two and a half kilograms. No matter how strict the diet for acute pancreatitis may seem, an approximate menu can never be boring and varied.

Here's how you can organize your meals when you're chronically ill:

  • 7 - 7: 30 am. Breakfast. Milk oatmeal, boiled beef, sweetened tea;
  • 9-9, 30 am. Lunch. Baked apples, steamed omelettes, rosehip tea;
  • 13, 00. We have lunch with vegetable soup, beef soup, pasta. For sweet berry jellies and soft drinks;
  • 16: 30. Afternoon snack. Cheese tea sticks;
  • 20. 00. We have dinner with tea and fish soup.

Here's a slightly different approach to diet planning. You can diversify the recipes. You need more protein and more fat than you would otherwise. Carbohydrates are also complex.

The main features of the diet are:

  • We use protein more than our physiological level;
  • Fats and complex carbohydrates are consumed within our standard limits, carbohydrates are obtained from grains;
  • Less than the norm is used jam, cakes, pastries, honey, sugar and salt.

During the period of remission, it is worth abandoning substances that irritate the mucous membrane of the gastrointestinal tract. It's not just alcohol - skip the vinegar and any spices.

If the disease is in remission, the diet can be changed. Now it is not only allowed to boil or steam food. You can stew and grill vegetables, fish and meat. Refusal of rubbing: whole grain foods are still allowed. Food should be warm, but not hotter than 60 degrees. We eat 4 to 6 times per knock, spaced up to three hours between meals.

In terms of numbers, it looks like this:

  • Protein needs 120 g, of which 70 g of vegetable origin;
  • Fats in the medical menu contain 90 g, a third of which is vegetable;
  • We eat 350 g of carbohydrates per day, 40 g of which are easily digestible;
  • Calorie content - up to 2600 kcal.

Don't be afraid of bland food and tasteless vegetables. With pancreatitis, there is also the opportunity to wander the culinary skills. Here are some inspiration and sweets for a sample pancreatitis diet menu.

  1. Cheese stew in the microwave. Beat 2% cottage cheese with bananas in a blender, add chopped dates. We bake for about five minutes in a silicone mold. Use with natural yogurt (unsweetened);
  2. Baked apples with curd meringue. Wash the fruit, cut off the middle, cut in half. Beat the protein and powdered sugar separately until thickened. During the whipping process, add 2% cheese and mix well. We stuff the fruits, bake in an ordinary oven (at 160 degrees) for a third of an hour;
  3. Cookies. Mix the flour (6 tablespoons) with half a tablespoon of olive oil, the same amount of baking powder, warm water, and one-third teaspoon of salt, plus Italian herbs to taste. After rolling it into a layer 3 mm thick and puncturing it with a fork, we bake it for a quarter of an hour at a temperature of 170 degrees.
